Chateau’s Chef, Honza Štěrba, foto Chateau’s Chef, Honza Štěrba grew up in nearby Nymburk. Not only is he close to Mcely geographically, but also his cooking philosophy perfectly aligns with the vision of Chateau Mcely. Honza became a member of the chateau’s culinary team just a few months after its opening in 2006. Over the last 5 years, he has gained significant experience and demonstrated special creativity leading up to his appointment as the chateau’s Head Chef. Under his leadership the Piano Nobile Restaurant follows the path of successfully blending the tastes of the Thurn-Taxis family traditional recipes with Italian inspiration by Grandma Cusumano. Honza’s rich experience with Italian cuisine comes from his stay in the Gatteo Mare region in Italy. He is not only creatively working on new delicacies for the seasonal menu, but he also prospects every day local suppliers for the highest quality in local ingredients.

“What I like the most about cooking is the fact that my job is not monotonous at all. Nowadays, cooking is not strictly based on recipes, and the chef has to be able to improvise with the ingredients that are at that time available in the highest and purest quality. The individual wishes and tastes of the guest are very important to me, I try to fulfill them and that is why my work is so diverse every single day.”
